Bittersweet with Praline
Tuesday November 15th 2011Just finished dipping some Bittersweet with Praline truffles. The praline is prepared ahead of time by caramelizing hazelnuts, then grinding them to small bits. I add this to my bittersweet ganache, set it in molds, then dip and top with caramelized cocoa nibs.
